• In the Cultural Studies class, we study different cultures. We look at what people do and why. This includes foods typical of the cultures. Students were getting ready to make tiramisu cups before school was dismissed for the year. I am including the recipe for the Mascarpone Cheese and the tiramisu cups we would be doing in class. This is easy enough to do at home and students love the process. 

     

    Tiramisu means “pick me up”

    It is an Italian dessert consisting of layers of sponge cake soaked in coffee and brandy or liqueur with powdered chocolate and mascarpone cheese. We use Nilla Wafers instead of lady fingers in the classroom. 

     

    MASCARPONE CHEESE RECIPE

     

    INGREDIENTS

    • 16 ounces cream cheese
    • 1/3 cup sour cream
    • 1/4 cup heavy whipping cream
    • 1 tablespoon lemon juice freshly squeezed

    INSTRUCTIONS

    1. Blend all ingredients together until smooth.
    2. Enjoy

     

    TIRAMISU CUPS

    INGREDIENTS

    • 16 ounces mascarpone cheese
    • 1/3 cup sugar
    • 1/4 cup 2% milk
    • 36 Nabisco Nilla Wafers
    • 1/2 cup strongly brewed coffee
    • cocoa powder

    INSTRUCTIONS

    1. In an electric stand mixer, blend together the mascarpone, sugar, and milk until fluffy. If necessary, add more milk to make the consistency your desired level of creaminess. Set aside.
    2. Start by piping the bottom layer of the mascarpone mixture into the bottom of 4 small glass cups.
    3. Sprinkle with a dash of cocoa powder.
    4. Dip the Nilla Wafers in the coffee, and layer three at a time into each cup.
    5. Top with more of the cream layer, then chocolate. Repeat one more time (three layers of each per cup)
    6. Top with more cocoa powder and a Nilla Wafer on top.
    7. Enjoy!
